Why did I bring my Italian Cuisine from Vegas to Cabos?
I am somebody who has embraced the love of cooking since the age of seven with my grandmother and have spent 56 years as a chef in the United States, 47 in Las Vegas and now nine here in Cabo San Lucas.
When I retired down here, there was some food that I was missing from the United States.
So I opened WTF Burger Bar to get a little slice of America here in Cabo San Lucas for locals and tourists that are down here.
Five years into that venture many people asked me: “Jimmy, this is great, but where are we going for dinner?”.
I didn’t have an answer for them, so I created JM Italian Steakhouse to give you two of the best foods in the world: The finest meats and seafood from around the world, and all of my grandmother’s recipes for italian dishes, and on top of that a theme and tradition to honor my father who was one of the greatest saxophone players in the world.
So throughout the restaurant there is memorabilia all the way back to 1946 when my father was General MacArthur’s bandleader in World War II. His most famous thing versus 38 gold albums.
My cuisine is what I believe the average people don’t want to cook at home. The majority of people that go out for dinner, go out to a steakhouse because, A they don’t know how to buy a steak and B, they don’t know how to cook the right steak.
The second part of my places, the italian part, which is I fly in branzino from Italy. I make all the breads, the pastas, the sauces from scratch to order. Even when you come in and order the soup, I make it right then on the spot in seven minutes soup to order.
So it’s very classic, italian simple. The very, very best products in the world served exactly the way you want it.
